This is a left-handed Santoku knife.
Often considered an all-purpose Japanese kitchen knife, the Santoku is a versatile knife used for almost every kind of cooking task in the kitchen.
Its name means “three virtues,” and it is said to be well suited for three types of ingredients: vegetables, meat, and fruit.
Slightly shorter than a standard chef’s knife, the Santoku is easy to handle even in compact kitchens, making it a highly practical choice.
The curved belly of the blade also makes it easier to mince ingredients while holding down the tip of the knife with your hand.

About Knife Care
After use, apply a mild detergent to a sponge and wash off any dirt. Rinse thoroughly, wipe away any remaining moisture with a dry cloth, and store the knife in a low-humidity place.
About Sharpening Kitchen Knives
No matter how well-made a knife is, it will gradually lose its performance if it is not properly maintained.
When a ripe tomato gets crushed instead of being sliced cleanly, or when chicken tends to slip and becomes difficult to cut evenly, it is a sign that the knife needs sharpening.
